FOR THE CAKE:
- 1 – 15.25 oz box of yellow cake mix or lemon cake mix
- 1 – 3.4 oz instant lemon pudding mix
- ¾ cup water
- ¾ cup oil
- 2 tablespoons lemon juice
- 4 eggs
- Butter-flavored cooking spray
FOR THE SOAKING SYRUP:
- 2 cups powdered sugar
- ⅓ cup plus 2 tablespoons lemon juice
- 2 tablespoons butter, melted
- Preheat the oven: Preheat the oven to 350°F and spray a 9 x 13-inch baking dish with butter-flavored cooking spray.
- Mix the cake batter: Beat the eggs with an electric mixer. Add cake mix, pudding mix, water, oil, and lemon juice to the eggs. Beat until smooth.
- Bake the cake: Pour the batter into the greased dish and bake for 30-35 minutes or until a toothpick inserted in the cake comes out clean.
- Prepare the soaking syrup: Mix powdered sugar, lemon juice, and melted butter in a bowl.
