  • 2 cups grated zucchini, squeezed dry

Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cut into small pieces

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Whisk together the dry ingredients in a large bowl.
  3. In a separate bowl, whisk together the sugar, oil, eggs, and vanilla.
  4. Add wet ingredients to dry ingredients, stir until just combined.
  5. Fold in zucchini and nuts.
  6. Pour batter into prepared pan.
  7. Combine ingredients for streusel topping, sprinkle over batter.
  8. Bake for 50-60 minutes.
  9. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
