Dry Ingredients
- 380 g All-purpose flour
- 1 tsp Baking powder
- 1 tsp Salt
Wet Ingredients
- 220 g Butter (cold, cut into small pieces)
- 120 g Granulated sugar
- 220 g Brown sugar
- 2 large eggs (size L)
- 2 tsp Vanilla extract
Add-ins
- 300 g Chocolate chunks (baking quality – mix of milk, dark, and white chocolate)
- Preheat the oven: Set your oven to 170°C (fan/ convection) and allow it to fully preheat before baking the cookies.
- Mix dry ingredients: In a bowl, combine the flour, baking powder, and salt thoroughly to ensure even distribution.
- Cream butter and sugars: Place the cold butter pieces into a mixing bowl along with both the brown and granulated sugars. Beat these together for about 2 minutes with an electric mixer until the mixture is creamy.
- Add eggs and vanilla: Incorporate the eggs and vanilla extract into the butter and sugar mixture. Mix briefly until just combined.
- Form the dough: Gradually add the flour mixture to the wet ingredients. Stir well to create a smooth, cohesive dough.
- Incorporate chocolate chunks: Knead in 200 g of the chocolate chunks evenly into the dough to distribute the chocolate pieces.
- Shape cookie dough balls: Divide the dough into 18 equally sized portions, each about 70 g, and roll each into a ball.
- Arrange on baking trays: Place the dough balls onto baking sheets lined with parchment paper, spacing them adequately—approximately 6 per tray.
- Flatten and add topping: Gently press each dough ball to slightly flatten it. Sprinkle the remaining chocolate chunks on top, pressing them lightly into the surface.
- Bake the cookies: Bake in the preheated oven for approximately 11 to 13 minutes. The edges should turn golden brown, while the centers remain soft.
- Cool the cookies: After removing from the oven, allow cookies to cool on the baking sheet for at least 5 to 10 minutes to set.
- Serve: Enjoy these cookies warm for the best melty chocolate experience, or serve them cooled—they remain delicious either way.
Notes
- Use cold butter for better texture and control when mixing.
- Do not overbake to maintain the soft interior texture.
- You can customize the chocolate chunk mix to your preference.
- Spacing dough balls well prevents cookies from merging during baking.
- Cookies keep well for up to 4 days in an airtight container.
