Instructions

  1. Preheat the oven: Set your oven to 170°C (fan/ convection) and allow it to fully preheat before baking the cookies.
  2. Mix dry ingredients: In a bowl, combine the flour, baking powder, and salt thoroughly to ensure even distribution.
  3. Cream butter and sugars: Place the cold butter pieces into a mixing bowl along with both the brown and granulated sugars. Beat these together for about 2 minutes with an electric mixer until the mixture is creamy.
  4. Add eggs and vanilla: Incorporate the eggs and vanilla extract into the butter and sugar mixture. Mix briefly until just combined.
  5. Form the dough: Gradually add the flour mixture to the wet ingredients. Stir well to create a smooth, cohesive dough.
  6. Incorporate chocolate chunks: Knead in 200 g of the chocolate chunks evenly into the dough to distribute the chocolate pieces.
  7. Shape cookie dough balls: Divide the dough into 18 equally sized portions, each about 70 g, and roll each into a ball.
  8. Arrange on baking trays: Place the dough balls onto baking sheets lined with parchment paper, spacing them adequately—approximately 6 per tray.
  9. Flatten and add topping: Gently press each dough ball to slightly flatten it. Sprinkle the remaining chocolate chunks on top, pressing them lightly into the surface.
