Ingredients

Scale

Bread Batter:

  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ⅔ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 ½ teaspoons pure vanilla extract
  • ½ cup milk (whole or 2%)

Apple Mixture:

  • 3 Granny Smith apples, peeled and chopped
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon

Cinnamon Sugar:

  • ⅔ cup brown sugar
  • 2 teaspoons ground cinnamon

Vanilla Cinnamon Glaze:

  • 1 cup powdered sugar
  • 1 ½2 tablespoons milk (whole or 2%)
  • ¼ teaspoon pure vanilla extract
  • ⅛ teaspoon ground cinnamon

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan generously with butter or cooking spray.
  2. Make the Dry Ingredients: In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Prepare the Apple Mixture: In another bowl, combine the chopped apples, brown sugar, and cinnamon. Stir well to coat the apples and set aside.
  4. Make the Bread Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.
  6. Assemble the Bread: Spread half of the bread batter evenly into the prepared loaf pan. Top with half of the apple mixture and half of the cinnamon sugar. Add the remaining bread batter, then top with the rest of the apple mixture and cinnamon sugar.
  7. Bake the Bread: Bake for 60-70 minutes, or until a toothpick inserted into the center of the bread comes out clean or with a few moist crumbs. If the top is browning too quickly, loosely cover with aluminum foil.
  8. Cool and Glaze: Allow the bread to cool for 15 minutes in the pan, then transfer it to a wire rack to cool completely. Once the bread has cooled, whisk together the powdered sugar, milk, vanilla extract, and cinnamon in a small bowl to make the glaze. Drizzle the glaze over the bread.
