Chicken Mixture
- 2 chicken breasts, finely diced
- 2 tbsp hoisin sauce
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tsp minced fresh ginger
Coleslaw
- 1 (397g) bag coleslaw
- 4 green onions, thinly sliced
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tbsp honey
Wonton Tacos and Garnishes
- 16 Wonton wrappers
- Cooking spray or olive/canola oil, for brushing
- Sweet chili sauce, to serve
- Chopped cilantro, to serve
- Sesame seeds, to serve
- Prepare Wonton Shells: Preheat the oven to 375°F (190°C). Spray wonton wrappers lightly with cooking spray or brush them with olive or canola oil. Drape the wrappers over the sides of a 9×13 baking dish to form shell shapes. Bake for 7-8 minutes carefully watching to avoid burning. Remove from oven and gently separate the shells while pliable to make filling easier. Bake an additional 7-8 minutes until the shells are golden and crispy.
- Cook Chicken: In a large bowl, combine the finely diced chicken breasts with hoisin sauce, 1 tbsp sesame oil, soy sauce, minced garlic, and minced fresh ginger. Heat a large skillet over high heat and sauté the chicken mixture for 7-8 minutes, stirring frequently, until the chicken is fully cooked and coated with the sauce.
- Make Coleslaw: In a separate large bowl, mix the bagged coleslaw and thinly sliced green onions. Add 1 tbsp sesame oil, rice vinegar, soy sauce, and honey to the vegetables, tossing well to combine all the flavors evenly.
- Assemble Tacos: Spoon the cooked chicken mixture into each crispy wonton shell. Top each with a generous amount of the prepared coleslaw. Drizzle sweet chili sauce over the top, then garnish with chopped cilantro and a sprinkle of sesame seeds. Serve immediately and enjoy the contrast of crunchy and savory flavors!
Notes
- Watch the wonton shells closely in the oven to prevent burning.
- Make sure to separate the wonton shells while warm as they are more pliable.
- You can adjust the sweetness or spice level of the sweet chili sauce to taste.
- For a spicier twist, add chopped fresh chili or sriracha to the chicken marinade.
- Substitute chicken breasts with thigh meat for a juicier option.
- These can be made ahead by preparing chicken and coleslaw separately; assemble just before serving to keep shells crispy.
