These Bacon Ranch BBQ Chicken Sliders are a delicious combination of flavors that are perfect for a quick and easy meal or party dish. Tender chicken breasts marinated in barbecue sauce, topped with crispy bacon, cheese, veggies, and a creamy ranch dressing, all sandwiched between soft Hawaiian rolls.

For the Chicken:

  • 1.5 lbs chicken breasts, cut into 4 inch pieces
  • 2 cups barbecue sauce, divided

For the Sliders:

  • 1 pack Hawaiian rolls, 12 count
  • 8 slices bacon
  • 1/3 cup mayonnaise
  • 1/4 cup ranch dressing
  • 2 cups shredded lettuce
  • 1/4 red onion, sliced
  • 12 squares Colby jack cheese (cracker-cut size is perfect)

Instructions

  1. Marinate the Chicken: Place chicken in a zip-top bag or bowl with 1 cup barbecue sauce. Refrigerate for at least 30 minutes or ideally 4 hours or overnight.
  2. Cook the Bacon: Cook bacon in a skillet over low heat until crispy. Drain on a paper towel-lined plate.
  3. Grill the Chicken: Preheat grill to medium heat. Cook chicken for about 3 minutes per side, basting with 1/2 cup barbecue sauce as it cooks. Chicken is done when it reaches an internal temperature of 165°F.
  4. Assemble the Sliders: Slice Hawaiian buns horizontally. Spread mayo on the bottom buns, add chicken, extra barbecue sauce, cheese, bacon, red onions, lettuce, and ranch dressing. Top with the remaining bun halves.
  5. Serve: Slice into sliders and enjoy!
