Salmon:
- 4 salmon fillets (6 oz each)
Boursin Topping:
- 1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese
- 1 tbsp olive oil
- 1 garlic clove, minced
- Zest and juice of ½ lemon
- Salt and black pepper, to taste
- 1 tbsp fresh parsley, chopped (optional)
- Cherry tomatoes or asparagus (optional, for roasting alongside)
- Preheat the Oven: Preheat the oven to 400°F (200°C) and prepare a baking dish by lightly oiling it or lining it with parchment paper.
- Season the Salmon: Pat the salmon fillets dry and place them skin-side down in the baking dish. Drizzle with olive oil, sprinkle with salt, pepper, minced garlic, and lemon zest.
- Add the Boursin Topping: Break the Boursin cheese into chunks and evenly distribute it over each fillet.
- Bake: Bake the salmon for 15–18 minutes, or until it is opaque and flakes easily. For a golden crust, broil for the last 1–2 minutes, being careful not to burn it.
- Garnish and Serve: Squeeze fresh lemon juice over the salmon, garnish with parsley, and serve hot.
