Ingredients

Scale

Chicken:

  • 3 pounds of chicken thighs, bone-in, skin-on

Marinade:

  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar, packed
  • 1/3 cup ketchup
  • 1/4 cup chicken broth
  • 2 tablespoons fresh ginger, grated
  • 2 garlic cloves, minced
  • 2 teaspoons sesame oil

Thickening Agent:

  • 1 tablespoon cornstarch
  • 1 tablespoon water

Garnish (optional):

  • Fresh pineapple slices
  • Green onions, sliced
  • Sesame seeds

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) and place chicken thighs in a baking dish.
  2. Prepare Marinade: In a saucepan, combine pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, garlic, and sesame oil. Simmer until slightly thickened.
  3. Thicken Sauce: In a small bowl, mix cornstarch and water. Add to the simmering sauce and whisk until thickened.
  4. Coat Chicken: Pour the sauce over the chicken, ensuring even coating.
  5. Bake: Bake for 45-60 minutes until chicken reaches 165°F (74°C), basting halfway through.
  6. Rest and Serve: Let the chicken rest before garnishing with pineapple, green onions, and sesame seeds.

Notes

  • You can marinate the chicken in the sauce for a few hours or overnight for more flavor.
  • Adjust the sweetness and saltiness of the sauce to suit your taste.
  • For a smoky flavor, you can grill the chicken instead of baking it.
