  • 1/6 tsp salt

  • 150 grams (2 cup) oat flour
  • 50 grams (1/2 cup) almond flour
  • 1 1/2 tsp baking powder

  • 150 grams (1 cup) fresh strawberries, diced

Instructions

  1. Preheat Oven: Heat your oven to 180°C (350°F) and prepare a 20 cm (7.9 inches) loaf pan by lining it with parchment paper or greasing it with oil to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, mash the ripe bananas thoroughly with a fork until smooth. Add the eggs, Greek yogurt, vanilla extract, and salt. Mix well until you obtain a smooth, consistent batter.
  3. Mix Dry Ingredients: In another bowl or directly into the wet mixture, add the oat flour, almond flour, and baking powder. Stir gently as you gradually pour in the milk to incorporate all ingredients evenly.
  4. Fold in Strawberries: Once the batter is smooth, carefully fold in the diced fresh strawberries to distribute them evenly without breaking them up too much.
  5. Bake: Pour the batter into the prepared loaf pan and optionally top with additional strawberries for a decorative finish. Place in the preheated oven and bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool: Remove the bread from the oven and allow it to cool in the pan for about 15 minutes. Then carefully take it out from the pan and let it cool completely on a wire rack before slicing and serving.
