Instructions

  1. Prepare the salmon: Pat the salmon cubes dry with paper towels to remove excess moisture. In a medium bowl, toss the salmon cubes with salt, black pepper, and cornstarch until each piece is evenly coated. This coating helps achieve a crispy exterior.
  2. Cook: For skillet method: Heat olive oil in a nonstick pan over medium-high heat. Add the coated salmon cubes and cook for 2–3 minutes on each side, or until they turn golden brown and crispy on the outside. For air fryer method: Lightly spray the air fryer basket with oil. Arrange the salmon cubes in a single layer and air fry at 400°F (200°C) for 8–10 minutes, shaking the basket halfway through for even cooking.
  3. Make the sauce: While the salmon cooks, combine mayonnaise, sweet chili sauce, sriracha, honey, and lime juice in a small bowl. Whisk thoroughly until the sauce is smooth and creamy. Adjust sriracha to suit your preferred spice level.
  4. Toss & serve: Once the salmon bites are cooked, transfer them to a mixing bowl and gently toss with the prepared Bang Bang sauce until each piece is fully coated.
