Shrimp

Batter

  • 2 Tbsp sour cream

  • ½ cup all-purpose flour
  • ¼ cup corn starch
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ¼ tsp paprika

Bang Bang Sauce

  • ⅔ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • 1 minced garlic clove
  • 1 Tbsp sriracha

Instructions

  1. Prepare Bang Bang Sauce: In a medium bowl, combine mayonnaise, Thai sweet chili sauce, minced garlic, and sriracha. Mix well and set aside to allow flavors to meld.
  2. Prepare Shrimp: Devein and peel the shrimp, removing tails if desired. Pat the shrimp dry with paper towels to ensure a crisp texture when frying.
  3. Make Milk Mixture: In a bowl, whisk together whole milk, sour cream, and lemon juice. This mixture tenderizes the shrimp and helps the batter adhere.
  4. Make Dry Coating: In a separate bowl, mix all-purpose flour, corn starch, salt, black pepper, and paprika to create the seasoned dry batter.
  5. Batter the Shrimp: Dip each shrimp first into the milk mixture, then coat thoroughly with the flour mixture. Place coated shrimp on a platter and repeat with remaining shrimp.
  6. Heat Oil: Pour 1 to 1½ inches of oil into a large skillet and heat it to 325°F (163°C). Use a thermometer for accuracy.
  7. Fry Shrimp: Fry the shrimp in batches to avoid overcrowding, cooking each side for 2-3 minutes until the shrimp are golden brown and cooked through. Remove shrimp and drain on paper towels.
