Ingredients

Scale

Main Ingredients

  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 3 cups beef broth (low sodium)
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Cheese Sauce

  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp butter (divided: 1 tbsp for onion, 2 tbsp for cheese sauce)

Garnish

  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Cook Onion: Melt 1 tablespoon of butter in a large skillet over medium heat. Add diced onion and cook for 3 to 4 minutes until softened.
  2. Brown the Beef: Add the ground beef to the skillet. Break it apart with a spatula and cook until it changes color and is fully browned. Drain excess fat if needed.
  3. Garlic Time: Stir in the minced garlic and cook for about 1 minute until fragrant, stirring constantly to avoid burning.
  4. Mix in Rice and Broth: Add the uncooked rice, beef broth, Italian seasoning, salt, and pepper. Stir well to combine all ingredients.
  5. Simmer Away: Bring the mixture to a boil, then reduce heat to low. Cover with a lid and let simmer for 18 to 20 minutes until the rice absorbs the broth and is tender.
  6. Create Cheese Sauce: In a small saucepan over low heat, melt the remaining 2 tablespoons of butter. Gradually stir in the Parmesan, cheddar cheeses, and milk, stirring continuously until the sauce is creamy and smooth.
  7. Blend Everything Together: Pour the cheese sauce into the skillet with the cooked beef and rice. Stir until evenly combined and creamy throughout.
  8. Final Touch: Cook uncovered for another 2 to 3 minutes to meld flavors. Garnish with chopped fresh parsley if desired and serve warm.

Notes

  • Use low sodium beef broth to control the saltiness.
  • If preferred, substitute ground turkey or chicken for a leaner option.
  • Freshly grated cheeses melt best for the cheese sauce.
  • For extra garlic flavor, roast the garlic beforehand instead of mincing raw.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
