This vibrant Beet Hummus recipe combines roasted beets and chickpeas with tahini, garlic, and lemon juice to create a bright, flavorful dip that’s perfect for serving with pita chips or fresh veggies. Its creamy texture and sweet-earthy flavor make it an exciting twist on traditional hummus, ideal for parties or healthy snacks.

Ingredients

Scale

Beet Hummus

  • 1 medium roasted beet (cooled)
  • 1 15-ounce can chickpeas (rinsed and drained)
  • 2 tablespoons lemon juice
  • 2 tablespoons tahini
  • 2 garlic cloves
  • ½ teaspoon salt
  • 23 ice cubes

For Serving

  • Extra virgin olive oil (for drizzling)
  • Fresh parsley (for garnish)
  • Arabic style pita chips (for dipping)

Instructions

  1. Prepare the beet: Peel the roasted beet and place it in a food processor. Pulse a few times to roughly chop the beet into smaller pieces, which will help the blending process.
  2. Add remaining ingredients: To the chopped beet in the food processor, add the rinsed chickpeas, lemon juice, tahini, garlic cloves, salt, and ice cubes. The ice cubes help keep the mixture cool and add smoothness.
  3. Blend the hummus: Process the mixture for 3 to 5 minutes, or until it becomes smooth and develops a bright pink color. Scrape down the sides as needed to ensure an even blend.
  4. Serve: Transfer the beet hummus to a serving bowl. Drizzle with extra virgin olive oil and garnish with fresh parsley. Serve at room temperature or chilled with Arabic pita chips or naan bread for dipping.

Notes

  • You can roast the beet by wrapping it in foil and baking at 400°F for about 45-60 minutes until tender.
  • For a thinner consistency, add a tablespoon of water or aquafaba (reserved chickpea liquid) while blending.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • This beet hummus is gluten free and vegan, making it suitable for various dietary preferences.
  • Add a pinch of cumin or smoked paprika to enhance the flavor if desired.
