  • 1/2 tsp. onion powder
  • 1 cup shredded cheddar cheese (112g)

  • 1/4 cup ketchup (65g)
  • 1/4 cup dill pickles, chopped
  • 1 tbsp. dill pickle juice

  • Handful shredded iceberg lettuce
  • 1/4 cup dill pickle chips

Instructions

  1. Preheat and Prepare Potatoes: Preheat your oven to 375 degrees Fahrenheit. Wash and chop the russet potatoes into small bite-sized pieces, leaving the skin on. Smaller chunks will cook more quickly and evenly.
  2. Cook Potatoes: Heat a pan over medium heat, add the olive oil, then add the chopped potatoes and 1/4 cup of water. Season generously with salt and pepper. Cook while stirring often to prevent burning, until potatoes begin to soften, about 5 to 10 minutes depending on chunk size. Transfer softened potatoes into a baking dish.
  3. Cook Ground Beef and Onions: In the same pan, add the ground beef and chopped white onions. Cook until the beef is mostly cooked through and onions are soft. Season with salt, pepper, garlic powder, onion powder, and yellow mustard. Stir well to combine.
  4. Combine Beef and Potatoes: Add the cooked beef mixture to the baking dish with the potatoes and mix them together thoroughly.
