Brownie Layer

Instructions

  1. Bake the Brownie Layer: Preheat your oven to the temperature specified on the brownie mix package (usually 350°F/175°C). Line a 9×13-inch baking dish with parchment paper or spray it with cooking spray for easy removal and cleanup. Prepare the brownie batter according to the package directions. Pour the batter evenly into the pan and press half of the chopped Oreos into the brownie batter. Bake for the time recommended for the brownie mix, but slightly underbake as this layer will cook again with the cheesecake layer; the top should be set but still soft. Remove from the oven and let cool slightly while preparing the cheesecake layer.
  2. Make the Cheesecake Layer: In a large bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy. Add granulated sugar, egg, and vanilla extract and beat until fully combined. Mix in sour cream until the mixture is smooth and free of lumps. Pour the cheesecake mixture evenly over the partially baked brownie base. Spread gently with a spatula to create an even layer. Sprinkle the remaining chopped Oreos over the top of the cheesecake layer.
  3. Bake the Cheesecake Layer: Return the pan to the oven and bake for 25 to 30 minutes, or until the cheesecake layer is just set – firm around the edges with a slight jiggle in the center. Remove from oven and let cool at room temperature for about 30 minutes. Then chill the bars in the refrigerator for at least 1 hour to help them firm up.

Add the Ganache and Toppings: In a small saucepan over low heat, or in a microwave-safe bowl, gently heat the chocolate chips and heavy whipping cream together until the chocolate is melted and the mixture is smooth and glossy.
