Tomato Mixture:
- 4 tomatoes on the vine (seeded and diced)
- 2 cups mini medley tomatoes (quartered)
- 4 garlic cloves (minced)
- 1/4 cup fresh basil (chopped)
- 1/4 cup grated parmesan cheese
- 1/2 tsp salt
Bruschetta Base:
- 1 Italian loaf (preferably with seeds)
- 1/4 cup olive oil
- 4 oz. goat cheese
- 4 tsp balsamic vinegar
- Preheat the oven to 400 degrees.
- Prepare the Tomato Mixture: Remove the core and seeds from the tomatoes. Dice and quarter them, then combine in a bowl with minced garlic, basil, parmesan, and salt.
- Prep the Bread: Slice the loaf, brush with olive oil, and toast in the oven.
- Assemble the Bruschetta: Spread goat cheese on the toasted bread slices, top with the tomato mixture, and drizzle with balsamic vinegar.
