Tomato Mixture:

  • 4 tomatoes on the vine (seeded and diced)
  • 2 cups mini medley tomatoes (quartered)
  • 4 garlic cloves (minced)
  • 1/4 cup fresh basil (chopped)
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp salt

Bruschetta Base:

  • 1 Italian loaf (preferably with seeds)
  • 1/4 cup olive oil
  • 4 oz. goat cheese
  • 4 tsp balsamic vinegar

Instructions

  1. Preheat the oven to 400 degrees.
  2. Prepare the Tomato Mixture: Remove the core and seeds from the tomatoes. Dice and quarter them, then combine in a bowl with minced garlic, basil, parmesan, and salt.
