  • 2 cups Buttermilk

Chicken Coating:

  • 2 1/2 pounds Chicken (chicken breasts, chicken thighs, or chicken tenders)
  • 2 1/2 cups All-Purpose Flour
  • 1/4 cup Corn Starch
  • 1 tbsp Baking Powder
  • 2 tsp Garlic Salt
  • 1 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Onion Powder
  • 1/2 tsp Oregano
  • 1/2 tsp Thyme
  • 1 pack Sazon

Other:

  • 3 large Eggs
  • 45 cups Vegetable Oil

Instructions

  1. Prepare the Marinade: Blend onion, garlic, hot sauce, garlic salt, smoked paprika, and poultry seasoning in a food processor until a paste forms.
  2. Marinate the Chicken: Coat chicken in the puree, then soak in buttermilk for 2 hours in the refrigerator.
  3. Coat and Rest: Dredge chicken in seasoned flour, dunk in buttermilk mixture, then coat again in flour. Let rest while oil heats.
  4. Fry the Chicken: Fry in hot oil until crispy and golden brown, about 8-10 minutes per batch.
