  • 4 cups beef broth

  • 1 teaspoon paprika

  • 2/3 cup uncooked white rice (jasmine rice recommended)
  • Salt and pepper, to taste

Instructions

  1. Brown the Beef and Onion: Add the ground beef and chopped onion to a large soup pot and cook over medium-high heat. Stir occasionally until the beef is fully browned, about 8 minutes. If there is a lot of excess fat, carefully spoon most of it out to avoid a greasy soup.
  2. Add Aromatics and Vegetables: Stir in the minced garlic and then add the chopped cabbage, tomato sauce, fire-roasted diced tomatoes with their juices, beef broth, water, paprika, Italian seasoning, and uncooked jasmine rice. Mix everything well to combine.
  3. Simmer the Soup: Increase the heat to high and bring the soup to a boil. Once it starts boiling, stir once more, then reduce the heat to low. Cover the pot with the lid slightly ajar and let it simmer gently for 15 to 20 minutes, stirring occasionally to prevent the rice from sticking to the bottom. Cook until the rice is tender and the flavors are well blended.
  4. Season and Serve: Taste the soup and season with salt and pepper as needed. Serve the soup hot for a satisfying, comforting meal.

Notes

  • You can substitute ground turkey or chicken for the beef to lighten the dish.
