Brownie Layer:

  • 12 ounces semi-sweet or bittersweet chocolate chips
  • 6 tablespoons unsalted butter (cut into small cubes)
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 eggs (room temperature)
  • ¼ cup unsweetened cocoa powder
  • ⅓ cup cornstarch
  • ½ teaspoon salt
  • 1 cup mini semi-sweet chocolate chips

Cheesecake Layer:

  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 egg (room temperature)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven: Preheat the oven to 350°F.
  2. Prepare pan: Lightly spray a 9-inch square baking pan with cooking spray and line with parchment paper, leaving an overhang.
  3. Brownie Layer: In a large bowl, melt chocolate chips and butter. Stir in sugar and vanilla. Add eggs one at a time. Whisk together cocoa powder, cornstarch, and salt. Combine dry mixture with wet mixture, then stir in mini chocolate chips. Pour two-thirds of the batter into the pan.
  4. Cheesecake Layer: Beat cream cheese until fluffy. Add sugar, egg, and vanilla, beating until smooth. Spoon over brownie layer. Drizzle remaining brownie batter on top.
  5. Bake: Bake for 30-35 minutes until a toothpick comes out with a few moist crumbs. Cool completely before cutting into squares.
  6. Storage: Store in an airtight container in the refrigerator.
