Meat Mixture
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 large egg
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Worcestershire sauce
- 1/4 cup ketchup
- 1 tbsp mustard
Topping
- 1/4 cup ketchup
- 1 tbsp mustard
Filling
- 3–4 oz cheddar or mozzarella cheese, cubed
Garnish (Optional)
- Preheat Oven: Preheat your oven to 375°F (190°C) and grease a mini muffin tin to prepare for baking the meatloaf bites.
- Prepare Meat Mixture: In a large bowl, combine the ground beef, breadcrumbs, milk, egg, finely chopped onion, minced garlic, salt, black pepper, Worcestershire sauce, 1/4 cup ketchup, and 1 tablespoon mustard. Mix thoroughly until all ingredients are evenly incorporated.
- Form Bites: Scoop about 2 tablespoons of the meat mixture at a time, flatten it in your hand, place a cheese cube in the center, then carefully shape it into a ball enclosing the cheese. Place each formed meatball into the greased mini muffin tin.
- Add Topping: Mix the remaining 1/4 cup ketchup with 1 tablespoon mustard and spoon a small amount of this sauce mixture on top of each meatloaf bite for extra flavor.
- Bake the Meatloaf Bites: Place the muffin tin in the oven and bake for 18–22 minutes. Bake until the bites are browned and fully cooked, reaching an internal temperature of 160°F (71°C).
- Serve: Remove the meatloaf bites from the oven and let them cool for 5 minutes. Optionally garnish with chopped fresh parsley before serving warm.
Notes
- Use a meat thermometer to ensure the bites reach a safe internal temperature of 160°F (71°C).
- Feel free to substitute cheese types based on preference, such as gouda or pepper jack for additional flavor.
- You can prepare the meat mixture in advance and refrigerate before forming the bites to save time.
- These bites can be served with dipping sauces like ranch, BBQ, or extra ketchup for variety.
