A refreshing and fruity cherry summer soup known as Kissel. This soup is perfect for hot days and features the sweet taste of red cherries balanced with a hint of lemon.

Cherry Base:

  • 1 lb sweet red cherries, fresh or frozen, pitted
  • 8 cups filtered water

Soup:

  • 3/4 cup sugar
  • 1 Tbsp fresh lemon juice
  • 4 Tbsp potato starch (dissolved in 1/4 cup cold water)

Instructions

  1. Prepare the Cherry Base: In a medium pot, combine 8 cups of water with 1 lb of pitted cherries. Bring the mixture to a boil over medium heat.
  2. Simmer the Cherries: Once boiling, reduce the heat to low and simmer for 12 minutes, partially covering the pot (leave a small gap to prevent spilling). Stir occasionally.
  3. Add Sugar and Lemon Juice: Stir in 3/4 cup of sugar and 1 Tbsp of lemon juice. Let the mixture continue simmering for an additional 3 minutes.
  4. Thicken the Soup: In a separate bowl, dissolve 4 Tbsp of potato starch in 1/4 cup of cold water. Slowly pour the starch mixture into the simmering soup while stirring constantly. Continue stirring until the soup thickens to your desired consistency.
  5. Cool and Serve: Remove the pot from the heat and allow the kissel to cool slightly. If you prefer a smooth soup, strain out the cherries, though keeping them in adds great texture and flavor. Ladle the warm soup into bowls or mugs and serve.
