Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat and cook the chicken for 6-7 minutes per side until fully cooked and no longer pink in the center. Remove and let rest for a few minutes before slicing thinly.
  2. Prepare the Avocado and Cheese: Slice the avocado and have your cheese slices ready.
  3. Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread evenly.
  4. Assemble the Sandwiches: On two slices of bread, layer the sliced chicken, avocado, and cheese. Add thin slices of red onion and tomato on top. Place the remaining bread slices on top, mayo side down.
  5. Grill the Sandwiches: Heat a skillet or grill pan over medium heat. Add butter or olive oil. Place sandwiches in the pan and cook 3-4 minutes per side until bread is golden and cheese melts, pressing gently with a spatula to melt cheese evenly.
