  • 250 grams Chicken breast (Boneless chicken breast or thigh)
  • 1 Onion (Cut thin slices)
  • 23 cloves Garlic (Finely chopped)
  • 23 Spring onions (Cut 2″ pieces)
  • 1 Bell pepper (Red or green, cut thin slice)
  • 1 Carrot (Julienned)
  • 23 Cabbage leaves (Cut thin slices)

For Cooking

  • 23 tbsp Cooking oil (Neutral flavour oil, add more oil if needed.)
  • 2 tbsp Light soy sauce (or regular all-purpose soy sauce)
  • 2 tsp Dark soy sauce
  • 4 tbsp Oyster sauce
  • 1 tbsp Sesame oil
  • 1 tbsp Brown sugar (or white sugar)
  • 1 tbsp Water
  • ¼ tsp White pepper

Chicken Marinade

  • 1 tbsp Light soy sauce (Regular all-purpose soy sauce)
  • 1 tbsp Corn starch
  • ¼ tsp Baking soda
  • 1 tsp Brown sugar (or white sugar)
  • ¼ tsp White pepper
  • 2 tsp Sesame oil (or cooking oil)

Instructions

  1. Marinate Chicken: Cut the chicken into thin slices. In a bowl, mix the chicken with light soy sauce, corn starch, baking soda, white pepper, sesame oil, and sugar until well combined. Set the marinated chicken aside to allow flavors to infuse.
  2. Prepare Noodles: Boil the dried egg noodles according to the package instructions until al dente. Drain them and rinse immediately with cold water to stop cooking. Set the noodles aside. (If using fresh noodles, you can skip boiling.)
  3. Make Chow Mein Sauce: In a small bowl or jar, combine light soy sauce, dark soy sauce, oyster sauce, sesame oil, brown sugar, water, and white pepper. Stir well and set aside.
  4. Cook Chicken: Heat a wok or large pan over medium-high heat. Add the marinated chicken and stir-fry until cooked through and lightly browned. Remove the chicken from the wok and set aside.
  5. Sauté Vegetables: Drizzle more cooking oil into the wok. Add finely chopped garlic and sliced onions; sauté until fragrant. Then add the harder vegetables such as carrots, cabbage, and bell pepper, cook until slightly tender but still crisp.
  6. Combine Noodles and Sauce: Add the cooked noodles to the wok, then pour the prepared chow mein sauce over them. Toss everything together to evenly coat the noodles with the sauce.
  7. Add Chicken and Finish: Return the cooked chicken to the wok and mix well with the noodles and vegetables. Finally, add the spring onions and give it one last toss before serving hot.

Notes

  • You can substitute chicken breast with thigh for a juicier texture.
  • If using fresh noodles, skip boiling them but separate them gently before cooking.
  • Adjust the amount of soy sauce and sugar in the sauce to your taste preferences.
  • If you want more heat, add some chili flakes or fresh chili while stir-frying the vegetables.
