For the Soup:

  • 2 tablespoons DeLallo Private Reserve Extra Virgin Olive Oil
  • 4 cloves garlic, thinly sliced or minced
  • 1/4 cup DeLallo Tomato Paste
  • 1/2 teaspoon Italian seasoning
  • 4 cups chicken broth
  • Salt to taste
  • 1 cup DeLallo Orzo Pasta
  • 2 cups chopped or shredded cooked chicken (such as rotisserie chicken)
  • 1/4 cup heavy cream
  • 12 cups water, as desired

For Serving:

  • Parmesan cheese
  • Herbs
  • Red pepper flakes
  • Lemon wedges
  • Bread
  • Pesto (optional)

Instructions

  1. Heat the olive oil in a soup pot over medium-high heat. Add the garlic and sauté until soft and fragrant.
  2. Add the tomato paste and Italian seasoning; cook until caramelized and deep red in color.
  3. Gradually add the broth and stir until smooth. Season with salt to taste.
  4. Add the orzo and simmer for about 10 minutes until cooked, adding water or broth as needed for consistency.
  5. Stir in the heavy cream and add the cooked chicken.
  6. Finish by adding lemon juice and serve topped with Parmesan, herbs, red pepper flakes, and bread. Pesto can be served on the side.

Notes

  • You can serve this soup with a side of pesto for dipping the bread.
