Ingredients

Scale

For the Chicken

  • 3 lb chicken thighs, thinly sliced
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp turmeric
  • 1 tsp sugar
  • 2 tbsp tomato paste
  • 1 tbsp olive oil

For the Garlic Sauce

  • 1/2 cup mayonnaise
  • 1/2 cup yogurt
  • 5 cloves garlic, grated
  • 1/2 lemon’s juice
  • 1 tbsp parsley, finely chopped

Sumac Onions

  • 1/2 red onion, thinly sliced
  • 1 tbsp sumac
  • 1/2 lemon’s juice
  • 1 tbsp parsley, finely chopped

To Assemble

  • Lavash (or tortilla, pita, or flatbread)
  • Garlic sauce
  • Harissa
  • Lettuce
  • Tomato
  • Pickles
  • French fries

Instructions

  1. Marinate the Chicken: In a large bowl, combine the sliced chicken thighs with salt, black pepper, ground cumin, ground coriander, paprika, onion powder, turmeric, sugar, tomato paste, and olive oil. Mix thoroughly until the chicken is evenly coated in the marinade. Cover and refrigerate for at least 30 minutes; for best flavor, marinate overnight.
  2. Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken and cook, stirring occasionally, until the chicken is fully cooked and developing light charred spots, approximately 8 to 12 minutes depending on thickness. Ensure the chicken reaches an internal temperature of 165°F (74°C).
  3. Make the Garlic Sauce: In a bowl, whisk together mayonnaise, yogurt, grated garlic, lemon juice, and finely chopped parsley until smooth. Taste and adjust seasoning if needed; set aside until ready to assemble.
  4. Prepare the Sumac Onions: In a separate bowl, combine the thinly sliced red onion with sumac, lemon juice, and chopped parsley. Let this mixture sit for at least 10 minutes to soften and develop flavor.
  5. Assemble the Wraps: Warm the lavash or your choice of flatbread. Spread a generous layer of garlic sauce and optional harissa for some heat. Add a layer of fresh lettuce, then top with the cooked chicken, sumac onions, pickles, sliced tomatoes, and crispy french fries. Roll the wrap tightly like a burrito or fold like a gyro.
  6. Serve and Enjoy: Serve the wrap warm and enjoy the vibrant and layered flavors of this classic chicken shawarma.

Notes

  • Marinating the chicken overnight intensifies the flavor and tenderness.
  • You can substitute chicken thighs with chicken breasts, but thighs remain juicier and more flavorful.
  • Adding fries inside the wrap is traditional and adds excellent texture and flavor.
  • Harissa is optional but adds a pleasant spicy kick.
  • Lavash can be replaced with pita, tortilla, or any flatbread based on preference.
  • For a lighter sauce, use low-fat yogurt and mayonnaise.
