A refreshing twist on the classic Waldorf salad, this Chicken Waldorf Salad combines tender roast chicken with crisp celery, sweet grapes, tart apples, and crunchy walnuts, all dressed in a creamy, tangy dressing.

For the dressing:

  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • juice of half a lemon

For the salad:

  • 5 ribs celery, chopped
  • 2 cups red grapes, quartered
  • 2 Granny Smith apples, cored and chopped
  • 2 cups roast chicken, chilled and cubed
  • 1 tablespoon fresh mint, finely chopped
  • 1 cup walnuts, rough-chopped or broken by hand
  • salt and pepper to taste

Instructions

  1. Make the dressing: In a small bowl, whisk together mayonnaise, Dijon mustard, and lemon juice. Set aside.
  2. Prepare the salad: In a medium-sized bowl, combine celery, grapes, apples, chicken, and mint. Add the prepared dressing and toss to coat. Season with salt and pepper.
