  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons water
  • 2 tablespoons canola oil

Instructions

  1. Prepare the mixture: In a medium bowl, combine the rinsed and drained chickpeas, all-purpose flour, grated Parmesan cheese, chopped parsley, ground cumin, garlic powder, salt, and black pepper. Add two tablespoons of water and mash or mix with a fork until the ingredients are well blended and form a slightly sticky mixture.
  2. Form patties: Divide the chickpea mixture into 6 equal portions. Shape each portion into thin, round patties, roughly the size of your palm, ensuring they hold together well for cooking.
  3. Cook fritters: Heat two tablespoons of canola oil in a large pan over medium heat until shimmering. Add the chickpea patties carefully and cook for about 2-4 minutes on each side or until they are golden brown and cooked through. Turn gently to avoid breaking.
  4. Drain excess oil: Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil, ensuring they remain crispy.
