Peanut Butter Mixture
- 1 cup (283g) creamy peanut butter
- 6 tablespoons (84g) butter
- 2 ¾ cups (311g) powdered sugar
- 1 teaspoon vanilla extract
Chocolate Coating
- 1 package (10 ounces) chocolate melting wafers (such as Ghirardelli or Candiquik)
- Cream Peanut Butter and Butter: In a mixing bowl, use a hand mixer to cream together the creamy peanut butter and butter until smooth and well combined.
- Add Powdered Sugar and Vanilla: Slowly add the powdered sugar into the peanut butter mixture and continue mixing until fully incorporated. Stir in the vanilla extract for flavor.
- Prepare Cookie Sheet: Line a large cookie sheet with wax paper or parchment paper to prevent sticking.
- Form Peanut Butter Balls: Scoop approximately 1-inch portions of the peanut butter mixture and roll each into a smooth ball. Place each ball on the prepared cookie sheet. Repeat until all the mixture is used.
- Chill Peanut Butter Balls: Refrigerate the cookie sheet with peanut butter balls for 20 minutes or until the balls are firm and hardened.
- Melt Chocolate: In a microwave-safe bowl, melt the chocolate melting wafers by microwaving in 30-second intervals, stirring in between. Continue melting in 10-second bursts if necessary until the chocolate is smooth and fully melted. Follow package directions for best results.
- Dip Peanut Butter Balls in Chocolate: Remove the chilled peanut butter balls from the refrigerator. Using a toothpick, dip each ball into the melted chocolate until fully coated. Place back onto the lined cookie sheet to set.
- Harden the Chocolate Coating: Allow the chocolate-covered peanut butter balls to harden completely at room temperature or in the refrigerator before serving.
- Store: Store the peanut butter balls in an airtight container in the refrigerator for up to 5 days to maintain freshness.
Notes
- For firmer peanut butter balls, refrigerate longer before dipping in chocolate.
- If chocolate is too thick for dipping, gently reheat or add a small amount of shortening to thin.
- Use creamy peanut butter for smooth texture; chunky peanut butter may affect consistency.
- Ensure chocolate balls are completely hardened before stacking or storing to prevent sticking.
- These treats can be frozen for up to 2 months for extended storage; thaw before serving.
