  • 1 tsp baking powder
  • 1/2 tsp salt

Wet Ingredients:

  • 1/2 cup butter (1 stick), softened
  • 1 cup granulated sugar
  • 1/2 cup sweetened shredded coconut
  • 2 large eggs
  • 1 tsp key lime zest
  • 1/4 cup key lime juice
  • 1 tsp coconut extract

Coating:

  • 1/2 cup powdered sugar

Instructions

  1. Preheat Oven: Preheat oven to 350°F and line baking sheets with silicone mats or parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar: Using a stand mixer, cream together butter, granulated sugar, and shredded coconut until light and fluffy.
  4. Add Wet Ingredients: Add eggs one at a time, mixing well after each addition. Then mix in key lime zest, juice, and coconut extract.
  5. Incorporate Dry Ingredients: On low speed, gradually add the flour mixture, mixing until just combined. The dough will be thick and slightly sticky.
  6. Coat and Bake: Roll spoonfuls of dough into balls, coat in powdered sugar, and place on baking sheets. Bake for 9-11 minutes until cookies are puffy and edges are firm. Cool on a wire rack before storing in an airtight container.
