Jalapeno Peppers
- 1 lb jalapeno peppers, sliced into 1/4 inch thick coins
Syrup
- 1 cup apple cider vinegar
- 2 cups granulated white sugar
- 1 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon mustard seeds
- 1/4 teaspoon celery seed
- 1/4 teaspoon ground turmeric
- Wash Jalapenos: Rinse the jalapeno peppers thoroughly under cold water to remove any dirt or residue.
- Prepare Peppers: Remove and discard the stems from the jalapenos and slice the peppers into 1/4 inch thick coins.
- Make Syrup: In a medium saucepan, combine the apple cider vinegar, granulated sugar, kosher salt, garlic powder, mustard seeds, celery seed, and ground turmeric. Bring to a boil over medium-high heat, stirring occasionally until the sugar dissolves, about 3-5 minutes.
- Add Jalapenos: Add the sliced jalapenos to the boiling syrup. Return to a boil, then cover and reduce the heat to medium-low. Simmer until the peppers change color and soften uniformly, about 5-6 minutes.
- Remove Jalapenos: Using a slotted spoon, transfer the jalapeno slices to a pint-size mason jar or heat-proof container, leaving the syrup in the saucepan.
- Reduce Syrup: Bring the syrup back to a full rolling boil and continue boiling until the liquid is reduced by half and becomes syrupy, approximately 5-8 minutes.
- Combine and Store: Pour the syrup over the jalapenos in the jar. Press the peppers down gently to ensure they are fully submerged in the syrup.
- Cool and Refrigerate: Allow the jar to cool completely before sealing. Store in the refrigerator until ready to use.
