Pasta:

  • 8 ounces spaghetti

Sauce:

  • 1 tablespoon olive oil
  • ½ cup butter (unsalted)
  • 1 medium onion (chopped)
  • 4 cloves garlic (minced)
  • Salt and pepper (to taste)
  • 2 teaspoons Italian seasoning
  • ½ cup white wine (such as Sauvignon blanc)
  • 1½ cups heavy cream
  • 1 cup Parmesan cheese (grated)
  • ½ teaspoon red pepper flakes

Instructions

  1. Cook the pasta. Cook the spaghetti according to package instructions. Reserve ½ cup of pasta water and drain.
  2. Cook the aromatics. In a large skillet, add the olive oil and butter and melt over medium heat. Add the onion and cook for 3 to 5 minutes until onion is softened. Add the garlic and cook for another 30 seconds until aromatic.
  3. Add in spices. Season with salt, pepper, and Italian seasoning.
  4. Add the liquids. Stir in the white wine and simmer for about 3 minutes. Add the heavy cream and bring to a boil. Add the reserved ½ cup of pasta water and stir. Simmer for another 5 minutes until the sauce thickens. Remove from heat.
  5. Finish the sauce and toss pasta. Stir in the Parmesan cheese into the sauce. Add the cooked pasta and toss it well.
  6. Garnish and serve. Garnish with additional Parmesan cheese and red pepper flakes.
