  • 1 cup heavy/whipping cream

Instructions

  1. Prepare the Chicken: Slice each chicken breast in half lengthwise to create four thin cutlets. Season both sides generously with salt and pepper, then lightly dredge each piece in flour, shaking off any excess.
  2. Heat the Pan and Cook Chicken: Heat the olive oil in a skillet over medium-high heat until hot. Add the floured chicken cutlets and cook for 4-5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté the Mushrooms: In the same skillet, melt the butter. Add the sliced mushrooms and sprinkle with Italian seasoning. Cook, stirring occasionally, until the mushrooms release their moisture, the water evaporates, and they develop a nice sear. Transfer mushrooms out of the pan and set aside with the chicken.
  4. Create the Sauce Base: Add the minced garlic, chicken broth, lemon juice, and Dijon mustard to the skillet. Stir well to dissolve the mustard and allow the mixture to simmer until reduced by half, about 3-4 minutes.
  5. Finish the Sauce and Combine: Pour in the heavy cream and return the cooked chicken and mushrooms to the skillet. Simmer for an additional 5 minutes, allowing the chicken to heat through and the sauce to thicken slightly. Taste and season with additional salt and pepper if needed before serving.
