These Crispy Chicken Egg Rolls are a delicious appetizer or snack that are filled with a flavorful mixture of ground chicken, vegetables, and seasonings, all wrapped up in a crispy egg roll wrapper and fried to perfection.

For the Chicken Filling:

  • 1 lb. ground chicken
  • 2 tsp minced ginger
  • 2 tsp minced garlic
  • 2 1/2 cups shredded cabbage and carrots (coleslaw mix)
  • 3 green onions, sliced
  • 1/2 tsp salt
  • 2 tsp sugar
  • 1 tbsp sesame oil
  • 1/4 tsp Chinese five spice powder

For Assembly:

  • 20 egg roll wrappers
  • 1 large egg, beaten
  • Vegetable oil, for frying

Instructions

  1. Cook the Chicken: In a wok or skillet, cook ground chicken with ginger and garlic until no longer pink. Drain excess fat.
  2. Add Vegetables: Stir in cabbage, carrots, green onions, salt, sugar, sesame oil, and Chinese five spice. Cook until tender. Let cool.
  3. Fill and Roll: Place chicken mixture on each egg roll wrapper, brush edges with egg, and roll up tightly.
  4. Fry the Egg Rolls: Heat oil to 375°F. Fry egg rolls until golden brown. Drain and serve.
