  • 1 pound gnocchi

  • 1 teaspoon red pepper flakes (optional)

Cheese

  • 4 ounces feta cheese, crumbled (about 115 g)

Instructions

  1. Cook the gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface, usually about 2-3 minutes. Use a slotted spoon to remove the gnocchi and set aside to drain.
  2. Brown the gnocchi: Heat the olive oil in a large frying pan over medium-high heat. Once hot, add the cooked gnocchi and cook undisturbed for 2-3 minutes until golden brown and crispy on one side.
  3. Crisp all sides: Gently stir the gnocchi and continue cooking for another 2-3 minutes, making sure they become crispy on all sides evenly.
  4. Sauté garlic: Reduce heat to medium, add the minced garlic to the pan, and sauté for about 1 minute until fragrant, taking care not to burn the garlic.
  5. Wilt the spinach: Add the fresh spinach to the pan and stir gently until wilted, around 2-3 minutes.
  6. Season the dish: Season with salt, black pepper, and optional red pepper flakes for a little heat. Remove the pan from heat.
  7. Add feta cheese and serve: Stir in the crumbled feta cheese so it combines with the warm gnocchi and spinach. Serve immediately while warm.
