For the Potatoes:

  • 1 lb baby potatoes, halved or quartered
  • 3 tbsp butter, divided
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste

For the Steak:

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp butter
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare potatoes: In a large skillet over medium heat, add 1 tbsp butter and 1 tbsp olive oil. Add potatoes, season with salt, pepper, rosemary, and thyme. Cook for 10–12 minutes until fork-tender and golden. Remove from skillet and set aside.
  2. Sear steak: In the same skillet, add 1 tbsp butter. Add steak bites in a single layer (do not overcrowd). Sear for 2–3 minutes per side until browned and cooked to your liking. Remove and set aside.
  3. Make garlic butter: Reduce heat, add remaining 1 tbsp butter and garlic. Sauté for 1 minute until fragrant.
  4. Combine & serve: Return steak and potatoes to the skillet. Toss everything in the garlic butter. Garnish with chopped parsley and serve warm.
