- 2 boneless skinless chicken breasts
- 4 cups chicken broth
- 2 10-ounce cans cream of chicken soup
- 1 teaspoon chicken bouillon powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Vegetables
- 2 cups frozen mixed vegetables
Noodles
- Prepare the base: In the crockpot, combine the cream of chicken soup, chicken broth, chicken bouillon powder, garlic powder, onion powder, and frozen mixed vegetables. Stir well to evenly distribute all ingredients.
- Add the chicken: Place the boneless skinless chicken breasts on top of the soup and vegetable mixture. Cover the crockpot with the lid.
- Slow cook the chicken: Cook on high for 3 to 4 hours or on low for 5 to 6 hours, until the chicken is fully cooked and tender.
- Shred the chicken: Remove the chicken breasts from the crockpot. Using two forks, shred the chicken into bite-sized pieces.
- Cook the noodles: Switch the crockpot setting to high. Add the dry egg noodles to the pot and return the shredded chicken back in. Stir gently to combine everything.
- Finish cooking: Cover and cook for approximately 45 minutes more, or until the egg noodles are tender and cooked through.
- Serve: Once the noodles are done, give the mixture a final stir and serve hot for a hearty and comforting meal.
Notes
- You can substitute mixed vegetables with fresh or other frozen veggies like peas, carrots, or green beans.
- If you prefer a thicker sauce, reduce the amount of chicken broth slightly or cook uncovered for the last 15 minutes.
- For added flavor, sprinkle freshly chopped parsley or grated Parmesan cheese on top before serving.
- This recipe is perfect for meal prep; leftovers store well in the refrigerator for up to 3 days.
