Ingredients

Scale

Dabeli Filling

  • 450 grams Potato (boiled, peeled and mashed)
  • 4 tbsp Dabeli Masala
  • 2 tbsp oil
  • 1/2 cup water (or as required)

Puff Pastry & Toppings

  • 490 grams puff pastry sheets (one box with 2 pastry sheets)
  • 2 tbsp milk
  • Sweet chutney (to serve)
  • Green chutney (to serve)
  • Garlic chutney (to serve)
  • Finely chopped Onion (to serve)
  • Sev (to serve)
  • Masala peanuts (to serve)
  • Pomegranate seeds (to serve)

Instructions

  1. Thaw Puff Pastry: Thaw the puff pastry sheets at room temperature according to the package instructions for 30-45 minutes, making sure they do not sit out longer than recommended.
  2. Preheat Oven: Preheat your oven to 400°F (200°C) and line two large baking trays with parchment paper.
  3. Prepare Dabeli Filling: Heat oil in a pan over medium heat. Add 4 tablespoons of dabeli masala and sauté for about 30 seconds to release the flavors.
  4. Add Water and Potatoes: Pour in 1/2 cup water, mixing well with the masala. Add the boiled and mashed potatoes, stirring thoroughly to combine.
  5. Cook Filling: Cook this mixture for 5 to 6 minutes, stirring frequently, until smooth and slightly thickened. Add more water if needed to achieve a spreadable consistency.
  6. Cool Filling: Turn off the heat and let the filling cool down completely before using.
  7. Roll Out Pastry: Lightly dust your working surface with flour. Open one thawed puff pastry sheet carefully and roll it out into a 9 x 12-inch rectangle.
  8. Spread Filling: Spread half of the cooled dabeli filling evenly over one half of the pastry sheet, leaving the other half plain.
  9. Fold Pastry: Fold the plain half of the pastry over the filling to create a sealed parcel.
  10. Roll Again: Gently roll the folded parcel into a rectangle approximately 7 x 14 inches. Repeat this process with the second pastry sheet and remaining filling.
  11. Cut Strips: Using a sharp knife or pizza cutter, slice each parcel into strips about 0.7 inches wide, resulting in approximately 19 strips per parcel.
  12. Shape Swirls: Take each strip, twist it lightly, then roll it into a spiral shape. This creates the distinctive swirl design.
  13. Arrange on Tray: Place the swirls on the prepared baking trays approximately 2 inches apart to allow room for expansion.
  14. Brush with Milk: Brush the tops and sides of each swirl with milk to promote a golden, flaky crust after baking.
  15. Bake: Bake in the preheated oven for 25 to 30 minutes, or until the puff pastry turns golden brown and crisp.
  16. Cool Slightly: Remove from oven and let the swirls cool for a few minutes before serving.
  17. Serve: Serve the dabeli puff pastry swirls with green chutney, sweet chutney, garlic chutney, chopped onions, sev, masala peanuts, and pomegranate seeds. For parties, consider arranging the toppings separately so guests can customize their bites.
  18. Enjoy: Savor the delicious combination of spicy, tangy filling and flaky, buttery pastry in these unique dabeli swirls.

Notes

  • Ensure the puff pastry is properly thawed but not too soft to avoid tearing while rolling.
  • Adjust water quantity in the filling to get a smooth yet firm consistency for easy spreading and rolling.
  • Brush with milk helps achieve a beautifully golden and flaky crust, but can be substituted with beaten egg for a richer glaze.
  • Serving chutneys and toppings separately allows guests to customize flavors and textures to their liking.
  • Store any leftover swirls in an airtight container and refrigerate. Reheat in a hot oven for 5-7 minutes to restore crispiness.
