Cookie Base
- 1 cup almond flour
- 1/3 cup flax meal
- 1/3 cup runny almond butter
- 1 cup Medjool dates, pitted
- 1/3 cup cocoa powder
- 1/3 cup dairy-free milk
- 1 tsp vanilla extract
Filling
- 1/3 cup raw cashews, soaked in hot water for 2 hours
- 1/3 cup coconut cream
- 1–2 tbsp maple syrup (optional)
- 1/2 cup vegan cream cheese (Kite Hill recommended)
- Prepare the cookie dough: Combine almond flour, flax meal, almond butter, pitted Medjool dates, cocoa powder, dairy-free milk, and vanilla extract in a food processor. Blend until the mixture forms a smooth dough.
- Shape the cookies: Scoop tablespoon-sized portions of the dough and roll them into balls. Flatten each ball into a cookie shape and set aside.
- Make the filling: Drain the soaked cashews and place them in the food processor. Blend cashews with coconut cream, vanilla extract, and maple syrup until smooth and creamy. Add the vegan cream cheese and pulse to incorporate until thick and creamy.
- Assemble the cookies: Spread the creamy filling on half of the cookie shapes. Place the filled cookies on a tray and transfer to the freezer.
- Freeze to set filling: Freeze the filled cookies for about 1 hour until the filling firms up. Remove from freezer once set.
- Form sandwich cookies: Top each filled cookie with a remaining cookie shape to create sandwiches.
- Finalize freezing: Return the assembled cookie sandwiches to the freezer for another 30 minutes to firm up completely.
- Serve: Enjoy the cookies straight from the freezer or let them thaw slightly before serving for a softer texture.
Notes
- If you prefer a sweeter filling, adjust the maple syrup quantity to taste.
- Soaking cashews for at least 2 hours softens them for a smoother filling texture.
- Use a food processor capable of blending dates and nuts into a smooth consistency.
- These cookies keep well in the freezer stored in an airtight container for up to one week.
- Letting the cookies thaw slightly before eating enhances the creamy texture of the filling.
