Ingredients

Scale

Main Ingredients

  • 1 Tbsp. Olive oil
  • 1 lb. Lean ground beef
  • 2 Tbsp. Taco seasoning
  • 1 Medium iceberg lettuce, chopped
  • 1 Large tomato, diced
  • 12 Cups Nacho cheese Doritos chips
  • 1 Cup Catalina dressing
  • Sour cream, for garnish (optional)
  • Guacamole, for garnish (optional)

Instructions

  1. Heat the Olive Oil: In a skillet over medium-high heat on the stovetop, warm 1 tablespoon of olive oil until shimmering but not smoking to prepare for cooking the meat.
  2. Cook the Ground Beef: Add 1 pound of lean ground beef and 2 tablespoons of taco seasoning to the heated skillet. Cook the beef thoroughly until browned, breaking it up with a spatula as it cooks. Once done, drain any excess fat and set the beef aside to cool slightly.
  3. Prepare the Vegetables: While the beef is cooling, chop one medium head of iceberg lettuce and place it into a large mixing bowl. Dice one large tomato and add it to the bowl.
  4. Combine Salad Ingredients: Add the cooked ground beef, 1 to 2 cups of Nacho cheese Doritos chips, and 1 cup of Catalina dressing to the bowl with lettuce and tomato. Toss all ingredients well to ensure an even distribution of flavors and crunch.
  5. Serve the Salad: Dish individual servings and optionally garnish with dollops of sour cream and spoonfuls of guacamole for added creaminess and flavor.

Notes

  • Ensure to drain the cooked beef well to avoid excess grease in the salad.
  • Adjust the number of Doritos chips according to personal preference for crunchiness.
  • For a lighter option, use low-fat Catalina dressing or substitute with salsa.
  • Additional toppings like shredded cheese or sliced jalapeños may be added for extra flavor.
  • This salad is best served immediately to maintain the Doritos’ crunch.
