Curry Broth

  • 1 can (13.5 fl oz / 400ml) coconut milk
  • 23 tablespoons red curry paste (adjust to spice preference)
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or sugar
  • 1 teaspoon sesame oil
  • 1 large garlic clove (grated)
  • 1 small cube of ginger (grated)

Dumplings & Vegetables

  • 1620 frozen veggie dumplings
  • 2 bok choy bulbs, chopped
  • 1 zucchini, sliced (or any vegetable of choice)

Garnish (Optional)

  • Sesame seeds
  • Sliced green onions
  • Cilantro/coriander
  • Chilli crisp oil

To Serve

  • White jasmine rice or noodles

Instructions

  1. Prepare the Curry Broth: In a large 12 x 8 inch (30 x 20 cm) baking dish, pour in coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil. Whisk thoroughly to blend the curry paste evenly. Grate in garlic and ginger and mix well. For a more brothy consistency (especially if serving with rice or noodles), add ½ cup water and stir.
  2. Add Vegetables: Preheat oven to 400℉ (200℃). Chop the bok choy and slice the zucchini. Add both to the baking dish and stir gently to coat the vegetables evenly in the curry broth.
  3. Arrange Dumplings: Place frozen dumplings in the dish without overlapping, pressing them slightly into the broth so the bottoms are submerged but the tops remain visible. Spoon some broth over the dumplings to cover the edges.
  4. Bake Covered: Cover the dish tightly with aluminium foil and bake for 20 minutes. This allows the dumplings and vegetables to cook in the flavorful broth.
  5. Bake Uncovered: Remove the foil and bake for an additional 5-10 minutes until the broth is bubbly and the dumplings develop a slight golden crisp on top.
  6. Garnish and Serve: Add your choice of sesame seeds, sliced green onions, cilantro, or a drizzle of chilli crisp oil before serving. Serve hot over steamed white jasmine rice or noodles for a complete meal.

  • You can substitute or add vegetables according to preference, such as bell peppers or mushrooms.
  • Ensure dumplings are spaced out so they cook evenly and crisp up nicely.
  • Using frozen dumplings means no thawing is needed — bake them straight from the freezer.
