Rice:
- 2 cups long-grain white or brown rice
- 2 cups chicken broth
Chicken and Vegetables:
- 1.5 lbs boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 packet or 2 tablespoons fajita seasoning

- Sauté the Veggies – Heat a large skillet over medium heat. Cook sliced onions and bell peppers until softened and fragrant. Remove from heat and set aside.
