Tips & Variations

  • Use your favorite type of noodles—cellophane, ramen, udon, or soba each add a unique texture.
  • For extra protein, add cooked chicken, tofu, or shrimp along with the gyoza.
  • Adjust the heat level by varying the amount or type of chili oil used.
  • If you prefer a creamier broth, stir in a spoonful of coconut milk when whisking in the cooking water.

Storage

Store leftover soup components separately in airtight containers in the refrigerator for up to 2 days. Reheat the broth gently on the stove and warm the noodles and dumplings separately before assembling. Avoid reheating everything together to prevent sogginess.

FAQs

Can I use frozen dumplings for this recipe?

Yes, frozen dumplings work well. Just follow the package instructions for cooking times, usually boiling or steaming until heated through.

What can I substitute for tahini?

If you don’t have tahini, you can substitute with peanut butter or omit it entirely. Tahini adds a subtle nuttiness and creaminess to the broth, but the soup will still be delicious without it.

Flavor Base

  • 1 tbsp curry paste (red, green, or yellow)
  • 2 cloves garlic (minced)
  • 1 tsp ginger (grated)
  • 2 tbsp parsley (finely chopped)
  • 2 tbsp tahini
  • 3 tbsp soy sauce
  • 3 tbsp hot oil (chili oil or neutral oil)

Main Ingredients

  • 150 g noodles (cellophane, ramen, udon, or soba; 5.3 oz)
  • 2 heads bok choy (halved or chopped)
  • 810 gyoza (dumplings, fresh or frozen)

Garnishes

  • 30 g scallions (or 1 oz, thinly sliced)
  • 1 tbsp sesame seeds (or 15 g)
  • 1 tbsp chili oil or chili crisp (or 15 ml)
  • Lime wedges
  • Seaweed sheets (nori)

Instructions

  1. Prepare the Flavor Base: In a large heatproof bowl, combine the curry paste, minced garlic, grated ginger, finely chopped parsley, tahini, and soy sauce. Heat the hot oil in a small pan until it shimmers, then carefully pour it over the mixture. Stir continuously until the mixture is smooth and aromatic, creating a rich and flavorful base for the soup.
  2. Cook the Noodles and Bok Choy: Bring a large pot of water to a boil. Add the noodles and cook according to package instructions. During the last 2 minutes of cooking, add the bok choy to blanch it until tender yet crisp. Using tongs or a slotted spoon, remove the noodles and bok choy from the pot, reserving the cooking water for later use.
  3. Cook the Gyoza: In the same boiling water or in a separate pot, cook the gyoza dumplings for 5 to 7 minutes or according to the package directions until fully cooked through. Drain them and set aside.
  4. Assemble the Soup: Slowly whisk the reserved noodle cooking water into the prepared flavor base to create a rich broth. Taste and adjust the seasoning by adding salt or chili flakes as preferred. This broth combines the curry and tahini flavors with the added starchiness of the noodle water for a silky texture.
  5. Serve and Garnish: Divide the cooked noodles, bok choy, and gyoza evenly among individual serving bowls. Pour the prepared broth over the ingredients. Garnish each bowl with thinly sliced scallions, toasted sesame seeds, and a drizzle of chili oil or chili crisp. Add lime wedges and nori sheets on the side for additional flavor enhancements. Serve immediately while hot to enjoy the full depth of flavors.

Notes

  • You can use any type of noodles you prefer, such as cellophane, ramen, udon, or soba, based on your taste and availability.
  • If using frozen gyoza, ensure they are fully thawed before cooking for even heat distribution.
  • The reserved noodle cooking water adds body and flavor to the broth; do not discard it.
  • Adjust the spiciness by choosing between mild or hot curry paste and chili oils.
  • For a vegan version, ensure the gyoza dumplings are vegetable-based and use soy sauce without fish additives.
