Instructions

  1. Prepare the Flavor Base: In a large heatproof bowl, combine the curry paste, minced garlic, grated ginger, finely chopped parsley, tahini, and soy sauce. Heat the hot oil in a small pan until it shimmers, then carefully pour it over the mixture. Stir continuously until the mixture is smooth and aromatic, creating a rich and flavorful base for the soup.
  2. Cook the Noodles and Bok Choy: Bring a large pot of water to a boil. Add the noodles and cook according to package instructions. During the last 2 minutes of cooking, add the bok choy to blanch it until tender yet crisp. Using tongs or a slotted spoon, remove the noodles and bok choy from the pot, reserving the cooking water for later use.
  3. Cook the Gyoza: In the same boiling water or in a separate pot, cook the gyoza dumplings for 5 to 7 minutes or according to the package directions until fully cooked through. Drain them and set aside.
  4. Assemble the Soup: Slowly whisk the reserved noodle cooking water into the prepared flavor base to create a rich broth. Taste and adjust the seasoning by adding salt or chili flakes as preferred. This broth combines the curry and tahini flavors with the added starchiness of the noodle water for a silky texture.
  5. Serve and Garnish: Divide the cooked noodles, bok choy, and gyoza evenly among individual serving bowls. Pour the prepared broth over the ingredients.
