Dry Ingredients
- 1 cup raw cashews
- 1/2 cup unsweetened shredded coconut (plus more for rolling)
- 1 cup pitted dates (packed)
Wet Ingredients
- 1 tablespoon lemon zest (from approx. 1 large lemon)
- 2 tablespoons lemon juice
- 2–4 tablespoons water
- Prepare the mixture: Add raw cashews, shredded coconut, pitted dates, lemon zest, lemon juice, and 2 tablespoons of water into a food processor. Process the ingredients until they are broken down and form a sticky, well combined dough-like mixture. If the mixture seems too dry and crumbly, add more water one tablespoon at a time until the desired consistency is reached.
- Form the balls: Using a small cookie scoop or your hands, scoop out the mixture and roll it into small balls. Place each lemon bliss ball onto a plate, baking sheet, or parchment paper. Continue this process until all the mixture is used, yielding approximately 22 lemon bliss balls.
- Optional coating: For an extra layer of texture and flavor, roll each lemon bliss ball in additional shredded coconut by spreading the coconut on a shallow dish and gently rolling each ball over it until fully coated.
- Chill and serve: Place the bliss balls in the refrigerator to chill for at least 30 minutes before serving to help them firm up and enhance the flavors.
Notes
- Store the lemon bliss balls in an airtight container in the refrigerator for up to one week.
- They can be frozen for up to three months; thaw in the refrigerator before serving.
- If dates are too dry, soak them in warm water for 10 minutes before processing to soften.
- Adjust the lemon zest and juice to taste for stronger or milder citrus flavor.
- These bliss balls can be made nut-free by substituting cashews with sunflower seeds if desired.
