  • 7 Large Bell Peppers (top and core removed)

For the Filling:

  • 2 Tablespoons Extra-virgin Olive Oil (or avocado oil)
  • 1 Medium Onion (diced)
  • 23 Garlic Cloves (minced)
  • 1 pound Lean Ground Beef
  • 1½ Cup Cooked Brown Rice
  • 14.5 ounces Diced Tomatoes (one can)
  • 1 Tablespoon Tomato Paste
  • 1 Teaspoon Dried Oregano
  • 1 Tablespoon Smoked Paprika
  • Kosher salt and pepper (to taste)
  • 1 Cup Shredded Cheddar Jack Cheese
  • freshly chopped parsley (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F and place the bell peppers cut side up into a baking dish or rimmed tray.
  2. Sauté Onion and Garlic: Heat olive oil in a large pan, sauté onion until soft, then add garlic and cook for 1 minute.
  3. Cook Beef Mixture: Add ground beef, cook until no longer pink, then stir in rice, diced tomatoes, tomato paste, oregano, and paprika. Cook until slightly reduced.
  4. Season and Stuff Peppers: Season with salt and pepper, stuff each pepper with the beef mixture, and bake until mostly tender.
  5. Add Cheese and Garnish: Sprinkle cheese over each pepper, bake until melted, and garnish with parsley before serving.
