Ingredients

Scale

Pasta and Mozzarella Eyeballs

  • 200g rotini or fusilli pasta
  • 150g mini mozzarella balls
  • 1 black olive (sliced into rounds)

Vegetables and Olives

  • Cherry tomatoes (sliced in half) – about 100g
  • 1 cucumber (diced)
  • 1 red bell pepper (diced)
  • 1 yellow bell pepper (diced)
  • 50g black olives (sliced)
  • 50g green olives (sliced)
  • Fresh basil leaves (chopped) – about 10g

Dressing

  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Cook 200g of rotini or fusilli pasta according to the package instructions until al dente. Once cooked, drain and rinse under cold water to stop the cooking process and cool the pasta. Set aside in a large mixing bowl.
  2. Prepare the eyeballs: To create the spooky eyeballs, take each mini mozzarella ball and place a slice of black olive on top to resemble the pupil of the eye. Arrange these mozzarella eyeballs on top of the pasta in the bowl.
  3. Add the vegetables and olives: Add the diced cucumber, red and yellow bell peppers, cherry tomato halves, and both sliced black and green olives into the bowl with the pasta. Mix gently to combine all these fresh ingredients evenly.
  4. Make the dressing: In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, 1 teaspoon of Italian seasoning, and salt and pepper to taste until well combined.
  5. Toss the salad: Pour the dressing over the pasta and vegetable mixture, then toss everything together until all ingredients are evenly coated in the tangy dressing.
  6. Garnish and chill: Sprinkle chopped fresh basil leaves over the salad for added color and flavor. Cover and chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld before serving.
  7. Serve: Serve this creepy Eyeball Pasta Salad chilled at your Halloween party or spooky-themed event and delight your guests with its fun and flavorful presentation.

Notes

  • You can substitute fusilli or rotini pasta with any short pasta like penne or farfalle.
  • For a vegan version, replace mozzarella balls with vegan cheese alternatives.
  • Adjust the quantity of olives depending on your preference for saltiness and flavor.
  • Chilling the salad enhances the flavor, but it can also be served immediately if preferred.
  • Add a pinch of red pepper flakes to the dressing for a slight spicy kick.
  • Use fresh basil for the best flavor; dried basil can be less vibrant.
