Ingredients

Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • Pinch of salt
  • Pinch of pepper

Salad:

  • 1 cucumber, peeled, fork-scored, thinly sliced, then diced
  • 1½ cups cherry tomatoes, quartered
  • 8 oz fresh mozzarella, sliced or pearl-sized
  • ½ large red onion, chopped
  • Optional: fresh basil leaves

Instructions

  1. Dressing: In a small bowl, combine olive oil, balsamic vinegar, oregano, basil, salt, and pepper. Mix well and set aside.
  2. Prepare Vegetables: Peel and dice the cucumber, quarter the cherry tomatoes, and chop the red onion. Place in a bowl.
  3. Add Mozzarella: Slice or use pearl mozzarella and add to the bowl with vegetables.
  4. Combine: Pour the dressing over the salad ingredients and mix gently to coat evenly.
  5. Marinate: Let the salad sit for 10 minutes to allow flavors to meld. Serve garnished with fresh basil, if desired.
