Instructions

  1. Prepare the granola dough: In a mixing bowl, combine the oats, cinnamon, almond butter, honey, and vanilla extract. Stir until a sticky dough forms. If the mixture feels too dry, gradually add extra almond butter and honey until it holds together well.
  2. Form the granola cups: Line a muffin pan with paper liners. Spoon about a tablespoon of the granola dough into the bottom of each muffin cup. Press firmly with your fingers to create a sturdy, compact base that will hold the yogurt filling.
  3. Add the yogurt and toppings: Spoon a generous amount of Greek yogurt into each granola base. Top with fresh berries of your choice and sprinkle any remaining granola dough over the top for added crunch.
  4. Freeze to set: Place the muffin pan in the freezer for at least 4 hours to allow the yogurt and granola cups to firm up. Before serving, allow the cups to thaw for a few minutes to soften slightly for the best texture.
