Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for baking the potatoes.
  2. Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly to remove dirt. Pat them dry with a towel, then pierce each potato several times with a fork to allow steam to escape during baking.
  3. Bake Potatoes: Place the potatoes directly on the oven rack or a baking sheet. Bake for 45-60 minutes, or until tender when pierced with a fork.
  4. Cool & Scoop: Remove the potatoes from the oven and let them cool for 10-15 minutes until they are safe to handle. Cut each potato in half lengthwise and gently scoop out most of the flesh, leaving about 1/4 inch of potato on the skin to maintain structure.
  5. Prepare Seasoning Mix: In a small bowl, mix together olive oil, minced garlic, dried rosemary, dried thyme, paprika, sea salt, and black pepper to create a flavorful herb oil.
  6. Brush the Potato Skins: Brush the insides of the hollowed potato skins generously with the herb oil mixture so they are well-coated.
  7. Roast the Potato Skins: Arrange the potato skins cut side up on a baking sheet and roast them in the preheated oven for 15-20 minutes until the edges turn crisp and golden brown.
  8. Add Cheese (Optional): In the last 5 minutes of roasting, sprinkle grated Parmesan cheese over the potato skins if a cheesy flavor is desired. Return to oven until the cheese melts.
