Ground Beef Mixture:
- 1 lb lean ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup bell peppers (any color), diced
- 14.5 oz can diced tomatoes (with juices)
Other Ingredients:
- 2 cups elbow macaroni or egg noodles
- 2 cups low-sodium beef broth
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers until soft, about 5 minutes.
